Born in "l'Esquillouté", a place once planted with walnut trees. Today, we cultivate Tannat there: dark like the walnut husk and robust like a walnut!

Harvest ...

We favor the best exposed plots, on which the Tannat reaches its optimal maturity.

Destemming ...

The stalk are taken off to avoid vegetal tannins in the wine. Then the grapes are crushed to promote the extraction of polyphenols.

Pre-fermentation maceration...

It is carried out at a temperature between 10°C and 12°C for 5 days, in order to extract fruity aromas.

Vatting ...

28 days

Alcoholic fermentation ...

The control of temperature allows a good progress of the alcoholic fermentation which takes place especially in stainless tanks. Thus we serve the fruity and the finesse of the wines.

Extraction ...

The extraction work takes place during the first half of the alcoholic fermentation through releases of the juice. This work is piloted by daily taistings.

Micro oxygénation ...

The wine is micro-oxygenated before and after running-off which gives it a balanced structure and coated tannins.

Malolactic fermentation...

It is made following alcoholic fermentation in cement vats.

The maturing ...

At the end of the malolactic fermentation, wine is transferred into oak barrels and stays there for 12 months. One third of our barrels are new.

Blending ...

This Madiran "Les Noyers" (walnut tree) is made with100% Tannat.

Filtration ...

A slight filtration takes place at the time of bottling.
